Living With Diabetes

Our family struggles with diabetes. It is a terrible disease that can seem harmless enough at first and then begin to creep in and destroy a life. Our journey with diabetes has included vision loss, loss of limbs and most recently, loss of kidney function. Living with dialysis is a whole other topic for another day, but I will just say now that it is a bigger challenge than we ever could have imagined.
Healthy eating has become an important part of our lifestyle since diabetes changed our world. We are not perfect, but we try. I make sure we have lots of fruits and veggies around at all times. We still eat red meat, but not as much. We eat a lot of chicken, and I have taught myself how to prepare fish. We try to eat a lot of the "super foods" like blueberries, broccoli, fish, spinach and kale, and I have experimented with adding stuff like wheat germ to my everyday recipes.
We've cut out almost all bread and pasta, and that has been partially because we are also working around a gluten intolerance. I've done some experimenting with gluten free recipes, but I usually find that it's just not worth it.
